Santa Fe Soup From the Arkansas Foodbank

2 lbs. ground beef (may substitute ground turkey or chicken)

1 large onion peeled and chopped

1 EACH 15-16 oz canned kidney beans, pinto beans, corn, stewed tomatoes – all undrained

1 small can chopped green chilies

1 package dry taco seasoning

1 package Hidden Valley Ranch dressing mix

water as needed

In a  large skillet, cook gound beef until no longer pink; drain. Add chopped onion and cook about five minutes until onion is soft. Stir in remainiing ingredients; add water as needed to make a medium thick soup. Simmer for about 30 min. adding more water if necessary. Serves 8.
