Here are two of my favorite summer salsa recipes! Great with chips or on fish or chicken. Enjoy!
Fresh Tropical Salsa
2 ripe mangos diced
1 cup crushed pineapple (fresh or small can)
1 jalapeno diced fine
1 small red onion diced
½ cup chopped cilantro
Mix together and serve with tortilla chips.
Farmers Market Tomato Salsa
4 cups chopped fresh firm ripe tomatoes
1 cup chopped onion
(either sweet yellow, Vandalia, or ½ cup purple onion, if it’s real strong)
½ cup chopped cilantro
1-2 chopped fresh jalapeños chopped fine
Salt & pepper to taste
Chill and eat with tortilla chips
Options : You can easily add chopped green, red, or yellow peppers
