Reruns again? Sorry for the reruns, but the new year has caught me with a busy schedule, interrupted by snowy days. This snowy morning I made a Dairy Hollow House German Baked Pancake also known as a Puff Pancake. Served with sauteed apples in brown butter and maple syrup, these were great! So I am going to share the simple recipe with you all.

German Baked Pancake
Preheat oven to 450 degrees. Beat together
3 large eggs
3/4 cut unbleached white flour
3/4 cup milk
1/2 teaspoon salt
1/2 teaspoon vanilla or lemon extract ( I use almond)
When very smooth, set aside while you melt
1 1/2 tablespoons butter
in a 12-inch heavy cast-iron skillet. When the skillet is quite hot, pour in batter and put skillet in oven. Bake for 15 min. at 450 degrees; lower oven to 350 degrees and bake another 10 min. Fill with fruit sauteed in butter with a bit of maple or brown sugar. Or just sprinkle with powdered sugar. Enjoy!
