Arkansas Root Culinary Competition

I will be on Channel 7 at the crack-o-dawn Thursday morning to talk about the Wildwood Harvest Fest. There is a culinary competition on Saturday at 1:00  and cash prizes are being awarded. I am a judge so I won’t be entering but this is the recipe I am demoing on the air. Happy Harvest, Mary Twedt

 

Root Vegetable Au Gratin

 

1 medium potato

2 carrots

1/2 medium onion

1 sweet potato

1/2-1 cup cream

1 cup shredded parmesan cheese

Salt & pepper

1-2 T flour

 

Peel and slice potato, sweet potato, and carrots to 1/8 inch. Slice onion very thin. Spray Pam or grease a 1 quart casserole dish. Start with a layer or potato, then salt & pepper the layer and sprinkle about 1 teaspoon of flour over that layer. Add about 2 T of Parmesan. Repeat layers with sweet potatoes, onions, and finally carrots. Next pour cream over the layers to just the bottom of the final layer. Top with Parmesan and then bake at 350 for one hour. This can be varied with different root vegetables like turnips, parsnips, beets, etc.
