Ingredients
1 lb ground turkey or lean ground beef
1 large chopped onion
1 package Hidden Valley Ranch Mix
1 can black beans
1 can chili hot beans
1 can whole kernel corn
1 can stewed tomatoes – plain
1 can stewed tomatoes – Mexican flavor
1 cup water
Preparation
Brown meat – drain.
Stir in remaining ingredients.
Simmer at least 15 minutes
1 cup = 3 points

Ingredients
12 -16 oz bag of spinach
1 ½ cups of sliced strawberries
½ cup toasted pecans (almonds or walnuts work too)
Dressing
1 cup sugar
1 cup oil
½ cup wine vinegar
3 t soy sauce
Salt & pepper to taste
Blend and dress salad

Preparation
Melt 1 T butter in a large saucepan and sauté ¾ cups sliced green onions until tender. Mix 1 T flour, 2 t chili powder & ½ t ground cumin then add to butter mixture
Stir in 16 oz. can drained whole kernel corn, 16-oz. jar of Ortega mild chunky salsa and 14.5 oz. can chicken broth. Bring to boil then remove from heat.
Combine ¼ cup of hot corn-salsa mixture with 8-oz. package of cream cheese. Stir until well blended. Add to saucepan along with 1 cup of milk. Cook over LOW heat until warmed but DO NOT BOIL.

Ingredients
1 ½ to 2 sticks of unsalted butter
2 T Greek seasoning
2 t garlic powder
2 t season salt
1 crushed chicken bouillon cube
Preparation
Put all in a baking dish in oven until melted. Add steaks, cook 7 min each side for med rare. 10 – 15 for med well 350˚. It will do as many steaks as will fit in your pan. I have done 6-8. This is also real good using pork chops. (This may be a bit salty for some so you can use a salt free season salt if you want.)

Ingredients
5 eggs
¼ cup milk
1 ½ cup shredded cheddar cheese
1 ½ cup shredded Monterey jack cheese
1 jar of Jalapeno slices
Cayenne
Preparation
Oven to 350˚
Spray pie plate with Pam
Line bottom and sides with jarred Jalapeno slices
Mix together in a bowl:
5 eggs
¼ cup milk
1 ½ cup shredded cheddar cheese
1 ½ cup shredded Monterey jack cheese
Pour over peppers and top with sprinkle cayenne
Bake for 30 min then let stand for 15 before slicing and serving.
Serve with tortilla chips. I really like the lime tortilla chips.
